Mediterranean Burger

Yield: 24 servings

Ingredients:
Mediterranean Spice Mix:
1/4 cup DFS Pickling spice
6 Tbsp. DiCarlo flour
6 Tbsp. DFS Paprika
1/4 cup DFS Granulated garlic
2 Tbsp. DFS Ground cumin
2 Tbsp. Dried mint leaves
2 Tbsp. DFS Dried oregano leaves
2 Tbsp. DFS Salt
1 Tbsp. DFS Ground black pepper

Gyros Sauce:
1-1/2 cups Hellmann’s Mayonnaise
1 cup Colombo Plain yogurt
1 cup Hood Sour cream
4 oz. Pegasus Feta cheese, crumbled
3 oz. DFS Cucumbers, peeled and chopped
2 Tbsp. Dried mint leaves

24 Plymouth Beef burger patties, any size
24 Fink Bakery sesame seed buns, split
48 DFS Tomato slices
12 oz. DFS Red onions, chopped

Directions:
1. To make Mediterranean Spice Mix: Grind pickling spice in blender or spice grinder. Add remaining ingredients. Blend until thoroughly mixed. Cover and reserve. 
2. To make Gyros Sauce: In bowl, mix ingredients until thoroughly blended. Cover and refrigerate.
3. For each serving, to order: Sprinkle one side of 1 patty with 1 tablespoon Mediterranean Spice Mix. Grill or broil patty to internal temperature of 155ºF for a 15-second hold. Toast or grill cut sides of 1 bun. Spread 2 tablespoons Gyros Sauce on bun bottom. Top with 2 tomato slices and grilled burger. Add 1/2 ounce onions and cover with bun top. Plate and serve with additional Gyros Sauce.
